Raw Cranberry Salad

Chop up 2 cups cranberries
2 T sugar
Small can drained crushed pineapple

(Let this set overnight)

(Noon next day) 1 cup sm marshmallows. Just before you eat add 1/2 pint whipping cream – place on lettuce leaves.


Cranberry Crockpot

Here are two easy recipes using canned cranberry sauce

CRANBERRY PORK

INGREDIENTS:
1 CAN (16 0Z) WHOLE CRANBERRY SAUCE
1/3 CUP FRENCH SALAD DRESSING
1 ONION SLICED
3 POUNDS PORK TENDERLOIN

DIRECTIONS:
IN A MEDIUM BOWL, COMBINE CRANBERRY SAUCE, SALAD DRESSING AND ONION.
PLACE PORK IN SLOW COOKER

COOK ON HIGH SETTING FOR 4 HOURS OR ON LOW SETTING FOR 8 HOURS.

SERVES 6

CRANBERRY TURKEY

INGREDIENTS:
1  BONE-IN TURKEY BREAST (ABOUT 6 POUNDS)
1 ENVELOPE ONION SOUP MIX
1 CAN (16 OZ) WHOLE CRANBERRY SAUCE

DIRECTIONS:
REMOVE EXCESS SKIN FROM THE TURKEY BREAST.
MIX TOGETHER THE ONION SOUP MIX AND CRANBERRY SAUCE AND POUR OVER TURKEY IN SLOW COOKER.

COVER AND COOK ON HIGH FOR 2 HOURS, THEN REDUCE TO LOW AND COOK FOR 6-7 HOURS OR UNTIL TURKEY IS TENDER.
REMOVE AND SERVE SLICES OF TURKEY WITH THE CRANBERRY SLOW-COOKER SAUCE.

Olympic Cranberry Cocktail

And yet, another Olympic cocktail from Canada

Canada: Mulled Cranberry Cider with Rum

Serves approximately 10

2 quarts cranberry-apple juice or 1 quart each cranberry juiceand apple cider

1 orange, cut into wedges

4-5 cloves

½ lemon, cut into wedges

5 cinnamon sticks

1 to 2 tablespoons honey, to taste

1½ cups dark or golden rum

Stud the orange with cloves. Simmer all ingredients except therum in a slow cooker for at least 30 minutes or up to three hours.Add rum to individual servings, about a shot (or jigger) permug.


Cranberry Squares

Haven’t tried this recipe, but it sounds interesting.

 

CRANBERRY BARS

 

Ingredients:

 

1 ½ sticks unsalted butter, cut into ½ inch cubes

2 cups all-purpose flour

½ teaspoon salt

1 cups plus 2tablespoons granulated sugar, divided

3 cups fresh or frozen cranberries (not thawed if frozen; ¾ pound

½ cup raspberry jam

¼ cup of water

zest of one lemon

Confectioners sugar for dusting

 

Preheat oven to350 with rack in the middle

 

Line a 9-inch square baking pan with 2 crisscrossed sheets of parchment, leaving an overhang on 2 opposite sides, then butter the parchment.

 

Blend butter,flour and salt and ½ cup granulated sugar in a food processor until mixture begins to clump together.  Press into bottom of pan

While crust is baking, cook cranberries, remaining 2/3 cup granulated sugar and water in a 2-quart heavy saucepan over medium heat, stirring occasionally, until berries burst, 6-8 minutes.  Add raspberry jam and the lemon zest and stir to combine.

 

Pour cranberries over crust and bake until edge is golden, about 25 minutes.

Sift confectioners sugar over top and cool completely in pan on a rack.

Life out of pan using foil overhang and cut into 12 squares, then sift more confectioners sugar over the top.

 

 

Christmas Cranberry Pudding

It’s little early for a Christmas recipe, but keep this in your files for December

Cranberry Christmas Pudding

Pudding
1 1/3 cups all-purpose flour
1/2 cup dark molasses
1/3 cup boiling water
1 teaspoon vanilla extract
2 teaspoon baking soda (put into the boiling water)
2 cups raw cranberries, washed and cut in half

Sauce
1 cup granulated sugar
1/2 cup evaporated milk
1/2 cup or margarine
2 teaspoons vanilla extract

Oil sides and bottom of 1 pound coffee can and foil to fit top of can.

Mix pudding ingredients.

In large pan with top add 1 to 1 1/2 inches water. Place can with pudding and covered with foil in large pan and cover. When it starts to steam, turn on low and steam for 1 1/2 hours. Check water in pan and add if necessary.

Take pudding out of tin immediately.

Sauce: Mix sauce ingredients and bring to boil stirring constantly. Remove from heat. Serve warm over pudding.

WILD RICE CRANBERRY PILAF

 

1 cup wild rice, rinsed under
cold water

 

2 ¼ cups low sodium chicken
stock

 

1 tablespoon unsalted butter

 

1 shallot, finely chopped

 

1 small onion, finely chopped

 

2 tablespoons chopped fresh
parsley

 

1 sprig fresh rosemary

 

1 cup dried cranberries

 

1 tsp grated orange rind

 

1/3 cup fresh orange juice

 

½ cup chopped toasted walnuts

 

In a large saucepan, combine
the rice with the chicken stock.  Bring
to a boil.

Reduce heat and simmer
uncovered 20-30 minutes.  The rice should
be tender but not mushy.

While the rice is cooking,
melt the butter in a medium skillet over medium heat and sauté the shallot,
onion and parsley with the rosemary until the onion is translucent, about 2-4
minutes.

Stir in the dried
cranberries, orange rind and juice

 

Toss this into the rice and
season with salt and pepper to taste. 
Fold in the walnuts.

COSMOPOLITAN — from Bad Name Bistro


1/4 oz. Triple Sec (Cointreau)
2 oz. Vodka, lemon
1 1/2 oz. Cranberry Juice
1 splash Lime Juice

Mixing Instructions:
Shake ingredients in a cocktail shaker with ice. Strain into a chilled cocktail glass and garnish with an orange twist and a couple of cranberries of course.

Makes 1 drink in either a martini glass or sparkling wine flute.

5 blackberries or black grapes
1-1/4 ozs. citrus vodka
3/4 oz. peach liqueur
2 ozs. white cranberry juice
Ice
1-1/2 ozs. champagne

1. Place spoonful of blackberries or black grapes in a chilled glass.

2. In a cocktail shaker, combine vodka, peach liqueur and  whitecranberry juice with ice. Shake vigorously and strain into chilledglass. Top with champagne and serve.

Go For The Gold Martini

60 ml (2 oz) vodka

30 ml (1 oz) Cointreau

30 ml (1 oz) white cranberry juice

Touch of maple syrup

Shake all ingredients in a cocktail shaker with ice and strain into a martini glass. For a wow factor sprinkle edible goldflakes over top.

Makes 1 serving.
