CRANBERRY CHICKEN

THERE ARE MANY RECIPES FOR CRANBERRY CHICKEN, BUT THIS IS THE EASIEST AND BEST TASTING, IN MY OPINION.

4 SKINLESS CHICKEN BREASTS
1 SMALL BOTTLE CATALINA SALAD DRESSING (8 OZ)
1 CAN WHOLE CRANBERRY SAUCE
1 ENVELOPE DRY ONION SOUP MIX
1/2 CUP WHITE WINE

PLACE CHICKEN IN A LIGHTLY GREASED 9″ X 13″ PAN
MIX REMAINING INGREDIENTS TOGETHER AND POUR OVER CHICKEN
BAKE AT 350 DEGREES FOR 1 HOUR

APPLE CRANBERRY POT ROAST

INGREDIENTS
     3 POUNDS BONELESS POT ROAST
     1 WHOLE SHALLOT, PEELED AND SLICED
     5 CLOVES GARLIC
     1 SPRING ROSEMARY, MINCED
     1 CUP RED WINE
     1 WHOLE APPLE, DICED IN 1/2 CUBES
     1 CAN WHOLE CRANBERRY SAUCE
     1 TABLESPOON DIJON MUSTARD
     1 TABLESPOON VEGETABLE OIL
     1 TEASPOON SALT
     1/2 TEASPOON FRESHLY GROUND PEPPER

PREPARATION
COMBINE ALL INGREDIENTS EXCEPT THE ROAST IN A SLOW COOKER AND STIR.  ADD THE ROAST AND SPOON SOME SAUCE ON TOP.  COVER AND COOK ON LOW FOR 8-10 HOURS. HALFWAY THROUGH, TURN THE MEAT OVER AND COAT WITH SAUCE.

REMOVE MEAT FROM POT AND SHRED OR CUT INTO PIECES.  TURN SLOW COOKER ON HIGH FOR 5-10 MINUTES TO THICKEN SAUCE.  RETURN MEAT TO THE POT, MIX WITH SAUCE AND SEASON WITH SALT AND PEPPER TO TASTE.

CRANBERRY APPLE PORK ROAST

THIS IS THE EASIEST PORK LOIN RECIPE USING CRANBERRIES AND IT’S GOOD!

INGREDIENTS:

MINCED GARLIC
1 CAN WHOLE CRANBERRY SAUCE
1/4 C BROWN SUGAR
1/2 C APPLE JUICE
2 APPLES. CORED, PEELED AND COARSELY CHOPPED
SALT AND PEPPER TO TASTE

PREPARATION:

PLACE ROAST IN SLOW COOKER; RUB ALL OVER WITH MINCED GARLIC. ADD
THE REMAINING INGREDIENTS AND COOK ON LOW FOR 7-9 HOURS.

I SERVED IT WITH MASHED POTATOES WITH THE GRAVY PRODUCED OVER THEM!

Lean Cusine Apple Cranberry Chicken

SO GOOD! A lot of great stuff in this one, including cranberries, apples, and grains! It’s sweet, but not overly sweet, and it contains a fair amount of high-quality chicken chunks. (We CAN’T overemphasize the importance of chicken quality in a frozen meal!) This fruity friend can hang out in our freezer anytime.


Cranberry Crockpot

Here are two easy recipes using canned cranberry sauce

CRANBERRY PORK

INGREDIENTS:
1 CAN (16 0Z) WHOLE CRANBERRY SAUCE
1/3 CUP FRENCH SALAD DRESSING
1 ONION SLICED
3 POUNDS PORK TENDERLOIN

DIRECTIONS:
IN A MEDIUM BOWL, COMBINE CRANBERRY SAUCE, SALAD DRESSING AND ONION.
PLACE PORK IN SLOW COOKER

COOK ON HIGH SETTING FOR 4 HOURS OR ON LOW SETTING FOR 8 HOURS.

SERVES 6

CRANBERRY TURKEY

INGREDIENTS:
1  BONE-IN TURKEY BREAST (ABOUT 6 POUNDS)
1 ENVELOPE ONION SOUP MIX
1 CAN (16 OZ) WHOLE CRANBERRY SAUCE

DIRECTIONS:
REMOVE EXCESS SKIN FROM THE TURKEY BREAST.
MIX TOGETHER THE ONION SOUP MIX AND CRANBERRY SAUCE AND POUR OVER TURKEY IN SLOW COOKER.

COVER AND COOK ON HIGH FOR 2 HOURS, THEN REDUCE TO LOW AND COOK FOR 6-7 HOURS OR UNTIL TURKEY IS TENDER.
REMOVE AND SERVE SLICES OF TURKEY WITH THE CRANBERRY SLOW-COOKER SAUCE.
